Chablis
Chablis is a specific type of Chardonnay that comes from the northernmost region of Burgundy, France. While respected for its unique aroma and taste, this wine has endured many hardships over the centuries with countless vines lost to wars, fires and frost before regaining its prominence in the 1950s.
Most Chablis are not aged in oak and are instead fermented in stainless steel tanks to create a lighter-bodied wine. Chablis are often fruity and dry with a refreshing acidity more prominent than other Chardonnays. It can exhibit flavors of green apple and lemon. Chablis often takes on distinct features of its surrounding soil and is renowned for its elegant “flinty” characteristics.
